Gastronomy
Kittitians and Nevisians use local produce, seafood, spices and game in their cuisine. The abundance of fresh fish, fruits and vegetables from the region helps Saint Kitts and Nevis cooks fuse local dishes with Caribbean spices.
A good place to start is in Basseterre, the capital of St. Kitts, where restaurants represent the variety of cuisines. Other cities, such as Charlestown or Newcastle in Nevis, also have many varied types of restaurants, but local cuisine is also easy to find.
Cassavas, yams, pumpkins, avocados, breadfruit, golden apples, gyres, wild cherries and seagrapes are among the island's abundant harvests.
Seafood is extremely important to the island's diet. Lobsters, crabs, shell, shrimp and snapper are common delicacies, especially when combined with West Indian curry. Some popular main dishes are rikkita (champagne marinated beef with Italian sauce), cookup (rice and peas with meat), salted fish and roast suckling pig. Goat water, also known as goat stew with fresh vegetables.
For dessert, try an upside down pineapple cherry cake, perhaps with a scoop of soursop ice cream. Spiced fruits, especially gines, mangoes and grapefruit, are also specialties after dinner in Saint Kitts and Nevis, where the cooking techniques are simple, the results are delicious.
